I highly recommend a book that I have been reading, “You, the Owner’s Manual” by Dr. Oz and Michael F. Roizen, both MD’s. It’s easy and interesting reading about, well, your body and how it works and how to keep it running well. He talks about ALL subjects, things that you have always wanted to know, and what symptoms are healthy and what aren’t. It also has some really good recipes which are healthy and taste great. The first one I tried was “Portuguese Bean Soup”. It’s surprisingly easy and quick to make. I made my own spin on it by adding the ground turkey meat, a 14 oz. can of tomatoes, a full can of beans, and about 3 cups of broth instead of what’s listed below. It tastes great with some Parmesan cheese sprinkled on top and some crispy whole wheat bread along with it….
1/2 teaspoon olive oil
1/2 cup coarsely chopped white onion
1 lb ground turkey meat
1 1/2 cups reduced sodium chicken broth
1/2 cup diced (1/2 inch pieces) unpeeled sweet potatoes
2 teaspoons chili garlic sauce
1/2 can diced tomatoes, undrained
1/2 can cannelloni beans, drained and rinsed
2 cups packed sliced swiss chard or collard greens
2 teaspoons balsamic vinegar
Heat large saucepan over medium-high heat. Add oil, then onion; cook 2 minutes, stirring occasionally. Add turkey meat and stir until cooked.Add broth, sweet potato, and chili garlic sauce; bring to a boil over high heat. Reduce heat and simmer uncovered 5 minutes. Stir i tomatoes and beans; return to simmer Stir in Swiss chard. Simmer 5 more minutes or until sweet potatoes and chard are tender. Stir in vinegar and ladle into bowls.
